Vegetarian Chili


Serves 4


INGREDIENTS

  • 2 cups of dried kidney beans or 4 cups washed canned beans
  • 1/3 cup of oil
  • 2 large onions diced
  • 6 minced gloves of garlic
  • 1 or more tablespoons chili powder
  • 1 tablespoon cumin
  • 1 tsp oregano
  • 1/8 tsp. cayenne pepper
  • 2 bay leaves
  • 1/2 cup bulghur—Povides the illusion of meat

DIRECTIONS

Prepare died beans and cook until just tender. Or use canned without need to cook. Sauté onions in oil about 10 minutes add all spices plus bulghar and continue to cook for 2 to 4 minutes.

28 oz.can of plum tomatoes coarsely chopped
1 tablespoon soy sauce
3 cups of water: amount varied by desired consistency
1 tsp salt & pepper to taste.

Combine all of above and cook for 30 minutes, adding 2 tablespoons butter just before serving. Have available diced onions as individual garnishment.

** For us carnivores add 1 lb of ground beef to the sauteing onions
