Sautéed Zucchini

Serves 4 - 5


  • 1 pound of zucchini coarsely shredded to make up 3 cups. I use a cuiz. disc number 6x6.
  • One cup of onions moderately finely chopped.
  • 2 - 3 tsp. of caraway seed.
  • 2 to 3 shakes of paprika enough to lightly color zucchini.
  • Salt and pepper
  • 2 tsp. each of vegetable oil and butter.


If the zucchini is moist can after shredding squeeze dry in a terry cloth towel.

Sauté onions until clear. Add zucchini and the rest of the above and cook over moderate heat for 5 to 10 minutes until just tender.
