Crispy Roasted Potatoes

Serves 4


  • 2 lbs red or white potatoes (about 6-8)
  • 2 tablespoons fresh rosemary, well-chopped
  • 1 tsp each salt and pepper
  • Dust with paprika for coloring.
  • 2 -3 tablespoons any oil. Can challenge mortality and use bacon grease.
  • 1 to 2 cloves minced garlic (optional)


Cut potatoes into quarters. Try to have all approximately the same size so they cook through evenly. Coat the potatoes generously with oil and spices.

Place in pyrex baking dish, skin sides down. Dish should be large enough so there is a slight separation of the potatoes.

Roast at 425 degrees for 40 to 50 minutes. Check at 40 minutes for ideal appearance.
