Mexican Cornbread

Serves 2


  • 2 cups cornbread mix (50% wheat flour, 50% cornmeal, 4 Tbl baking powder and 1 Tbl sugar)
  • 3 eggs
  • 1 cup buttermilk, yogurt or milk
  • 1 cup melted butter scant (she used Crisco). Melt in oven at 400degrees in the big black cast iron pan you will cook this in while you mix the other ingredients.
  • 1 can corn without liquid
  • 1 small can shredded green chilis- mild (or 1 cup fresh grated)
  • 1/2 - 1 cup shredded cheese - put this on top as you put it in the oven


Mix every thing up, add the melted butter, turn into the now greased big black skillet. Top with cheese and bake 35-45 minutes. It should get crusty if cooked this way.
