Alaska Avenue Creamed Spinach


Serves 4


INGREDIENTS

  • 4 10z. packages of chopped frozen spinach. Can use fresh spinach allowing 1 pound per 2 servings.
  • 1/2 generous cup red onion chopped --1 medium onion
  • 1 tsp. salt
  • 1 tsp. of curry
  • 1/2 tsp. of dried tarragon or oregano
  • 1-1/2 to 2 cups of milk.
  • 1 Tbs. of light colored roux. Sauté with equal parts butter briefly. Stir frequently to prevent burning.
  • 2 to 3 Tbs. of butter
  • 8 oz. sour cream

DIRECTIONS

Defrost the spinach. Can use microwave. Squeeze all moisture out of spinach. Can press it while in colander or squeeze it out by individual handfuls. The latter method does more complete job but is more time consuming. [moist spinach will sour the flavor].

Sauté the onion in butter with curry until translucent. Add 1-1/2 cups of milk and roux heat and stir until there is a thickened white sauce the consistency of pancake batter. You still have 1/2 cup of milk to adjust viscosity either now or latter.

Add spinach, sour cream, salt, and tarragon or oregano. Cook over low to moderate heat for 20 to 30 minutes until the spinach is tender. Adjust texture and flavor with more milk and salt as needed.
