Parsley Salad Dressing


Serves 6


INGREDIENTS

  • 1-1/2 cups of firmly packed parsley
  • 1 cup of oil
  • 4 Tbs. lime juice
  • 1 Tbs. white or red vinegar
  • 1 tsp. Dijon style mustard
  • 1 tsp. salt
  • Pepper to taste

DIRECTIONS

Mix in blender. Will keep 3 to 5 days in fridge. Can make 1/2 to 1/4th quantity if this suits your circumstance. It’s the only dressing I make which contains neither garlic nor onions.
