Chinese Chicken Salad


 


INGREDIENTS

  • 2 Tbs. rice vinegar
  • 4 Tbs. red wine vinegar
  • 4 Tbs. tamari or soy sauce
  • l/4 to 1/2 tsp. cayenne
  • 1 Tbs. sesame oil
  • 1 small head of Romaine lettuce
  • 1 fist full of bean sprouts
  • 2 Tbs. of roasted cashew
  • 1/2 cup of chopped cilantro

DIRECTIONS

Cut two 1/2 skinless chicken breasts into bite size pieces. Cover with 2 Tbs. of soy or tamari sauce and cook until just done in microwave, moving the rare inside pieces to the periphery at 2 minute intervals to insure even cooking. Combine all ingredients above.

Toss greens with just enough oil to coat. Add the rest of the items.

Make a meal of it. Will make you feel that you have prepared " a dietary correct" offering for a change.
