Blue Cheese Dressing
1/2 cup of crumbled blue cheese
3 oz. lemon juice. The juice of 2 large lemons.

5 oz. of oil
7 - 9 scallions finely chopped to include about 1/2 inch of the green.
1-1/2 tsp. of salt
1 tsp. of pepper
Withhold some of the lemon juice. Add only as needed for taste after tossing the salad.
Can add to this coarsely chopped roasted walnuts. [Place in 350* oven 8-10 minutes. Watch closely] Can also add bite size apple or pear.
DO NOT ADD avocado to this salad, for it tends to smother the flavor of the dressing.
