Place in mortar:
With pestle, process until paste texture is grit free - takes awhile. Add to mortar 6 to 8 Tbsp. of the vinegar of your choice and often a small amount, about 1 tsp., of balsamic vinegar– there are many varieties. Toss salad with olive oil; I prefer the light almost tastless variety. Toss again with vinegar mixture. YOU'RE ON! |
