Update of Paul’s Salad Dressing



INGREDIENTS

  • Medium size skin-free pressed garlic clove
  • 1 tsp. of toasted sesame oil
  • Scant tsp. of large grain salt (provides the grist)
  • Scant tsp. or more of ground black pepper
  • 6 to 8 Tbsp. of the vinegar of your choice
  • 1 tsp. of balsamic vinegar
  • Olive oil

DIRECTIONS

Place in mortar:

  • Medium size skin-free pressed garlic clove
  • 1 tsp. of toasted sesame oil
  • Scant tsp. of large grain salt (provides the grist)
  • Scant tsp. or more of ground black pepper

    With pestle, process until paste texture is grit free - takes awhile.

    Add to mortar 6 to 8 Tbsp. of the vinegar of your choice and often a small amount, about 1 tsp., of balsamic vinegar– there are many varieties.
    Toss salad with olive oil; I prefer the light almost tastless variety.
    Toss again with vinegar mixture. YOU'RE ON!
