Paul's Meat Balls


Serves 3 to 4


INGREDIENTS

  • 1-1/2 pound of ground chuck

    Place the following in blender:
  • 1/2 cup milk
  • 1/2 cup chopped onions (one small onion - 2 inches in diameter)
  • 1 tsp. curry
  • 1/4 tsp. oregano
  • 1 tsp. salt
  • 1/2 cup of lightly packed Italian parsley
  • 4 Saltine crackers that have been crushed to approximate mealie texture. (This provides a holding of moisture.)

DIRECTIONS

Blend above and mix into the ground chuck.
If it seems too dry you might need to add more milk.
Shape into 6 to 7 balls and bake at 350 degrees for 30 minutes.

RECOMMENDED SOUR CREAM GRAVY

  • 1 cup of beef stock
  • 1 tsp. Worcestershire sauce
  • 8 to 12 oz sour cream
  • 1 tsp. salt
Thicken beef stock with rue to texture of thin gravy. Add Worcestershire sauce. Do not use bouillon cubes - too salty. Recommend label “Better Than Bouillon”
