INGREDIENTS

2 dozen small chicken legs that have been broiled for 8 to 10 minutes on each side to crisp and brown their skins.
Place in skillet:

2 to 3 Tbs. of oil

3 tsp. of finely graded ginger

3 to 4 dried red peppers coarsely chopped.

2 to 3 well chopped scallions
Sauté briefly to incorporate flavors in the oil and then add:

4 Tbs. soy sauce diluted with 1/2 cup of water

1-2 Tbs. sake or white Chinese wine.(Mezhu Tou)
DIRECTIONS
Add the broiled chicken and simmer for 20 minutes turning occasionally.
