Doreen's Chicken Legs


Serves 4


INGREDIENTS

  • 2 dozen small chicken legs that have been broiled for 8 to 10 minutes on each side to crisp and brown their skins.
     
    Place in skillet:
  • 2 to 3 Tbs. of oil
  • 3 tsp. of finely graded ginger
  • 3 to 4 dried red peppers coarsely chopped.
  • 2 to 3 well chopped scallions
     
    Sauté briefly to incorporate flavors in the oil and then add:
  • 4 Tbs. soy sauce diluted with 1/2 cup of water
  • 1-2 Tbs. sake or white Chinese wine.(Mezhu Tou)

DIRECTIONS

Add the broiled chicken and simmer for 20 minutes turning occasionally.
