Rita’s Chili


Serves 10 to 14


INGREDIENTS

  • 2 large onions, diced
  • Three 14 oz. cans of beans almost any kind—pinto, black, kidney or cooked dried beans from scratch.
  • 14 0z. can of corn
  • Your preferred salsa
  • 1 lb of ground hamburger
  • 1 tbsp chili powder & cumin
  • 2 bay leaves
  • 1 tsp oregano
  • 6 cloves of minced garlic
  • 1/8 tsp cayenne
  • 1 tbsp soy sauce
  • 14 0z. can chopped pitted black olives
  • 1- 2 tbsp tomato paste

DIRECTIONS

Cook hamburger, all the spices and most of the onion and then combine in large casserole with the cans of beans, corn, and chopped olives. Simmer for awhile.

Garnish: Fritos, onions, cheese, celentro, salsa, sour cream plus whatever.
