John's Lamb Curry

INGREDIENTS

  • 5 lbs. lamb neck
  • 1 cup oil
  • 2 or more T butter
  • 1 minced garlic
  • 1 T minced ginger
  • 1 onion diced - best to use quiz (Cuisinart).
  • 3 stalks celery diced - best to use quiz (Cuisinart).
  • Two 12 oz. cans of coconut milk

    SPICES:
  • 1 tsp each: coriander, cayenne, black pepper, allspice
  • 2 tsp cumin
  • 2 T curry

DIRECTIONS

Brown lamb in oil and set aside. Saute in butter until translucent: onions, flower celery and all the spices. Add the garlic near the end. Place in baking dish and add the lamb and coconut milk.

Bake covered 275 degrees for 4 hours.
