Ma-Moo's Coffee Cake



  • 2 cups flour
  • 1 cup sugar
  • 3/4 scant cup Crisco
  • 3/4 cup milk
  • 2 rounded tsp. baking power sifted with the flour
  • Rind of lemon and orange grated
  • 2 eggs
  • 1 tsp. lemon juice
  • 1/2 tsp. vanilla
  • cinnamon sugar and bits of margarine for topping


Put into bowl and mix as you would for biscuits-beat 2 whole eggs and alternately with milk. Beat well 6 to 8 times. Add lemon juice, pinch of salt, and vanilla. Pour into 9 by 9 square pan and top with sugar, cinnamon, and dots of margarine. Bake at 350* for 45 minutes

I update this by using butter, not Crisco or margarine. Note the dated style of the instructions.

This coffee cake was made by Ma-moo 3 to 5 times a year. She was proud of it, claiming that it was both simple and good. I had asked B Pritz to for this recipe for years and she suddenly came up with a copy of the original some forty years after the ashes.
