Gugglehof


 


INGREDIENTS

  • 1 cup sugar
  • 1 stick of soft butter
  • 1 graded lemon peel
  • 3 eggs, separated
  • 1 cup of milk
  • 3 Tablespoons whipping cream
  • 2 to 2 & 1/2 cups flour
  • 2 tsp. baking powder
  • 1 bag of bitter sweet chocolate chips. Try coating with flour so they will not end up at bottom of cake.

DIRECTIONS

Cream the butter and sugar. Add the egg yolks, milk and whipping cream, and mix them together. Continue to mix adding the flour baking soda slowly until the desired consistency is reached. Add the lemon peel. Fold in beaten egg white and add the chips.

Bake in well buttered and flour-dusted bundt pan at 375 degrees for 45 minutes. Invert pan and let cool before removing. Dust top of gugelhof with powdered sugar. Insert a tactful or accurate number of candles.

* This cake is a modern corruption of a German recipe in which raisins have been upstaged by the chocolate chip. Introduced to us by Edith Jonas. It has become the traditional birthday cake in our family starting even before the boys arrived.
