Microwave Butterscotch Sauce


Serves 6 to 7

INGREDIENTS

  • 1 tablespoon of cornstarch that has been well dissolved in a little water (1 to 2 tsp.)
  • 1 1/4 cup of light brown sugar packed
  • 1/2 cup of cream or half & half
  • 2 tablespoons of light corn syrup
  • 1/8 tsp salt
  • 1/4 cup of butter=1/2 of a stick
  • 1 tsp of vanilla

DIRECTIONS

Mix all the liquid ingredients well, dissolved corn starch, cream, corn syrup and the salt.

Mix in the sugar.

Cook in microwave at HIGH for 3 minutes, then add half of the butter and only partially stir in.

Continue to cook for another 2 minutes.

Add remainder of butter and stir in.

When cool add the vanilla. May serve cool or warm.
